Hawaii produces some of the most exclusive and award-winning cacaos in the world. Very small plantations are developing on the 4 main islands of Hawaii. Palette de Bine is a member of “The Hawaii Chocolate and Cacao Association” to better understand the emergence of this growing industry. Hawaii seeks to become the global center of excellence in cocoa quality, research and education, and chocolate tourism. Christine, our chocolate maker, works in collaboration with Ben Field from Mapele Fields in Kahalu’u on the island of O’ahu. 150 kg of cocoa from the 2024 harvest made its way from Honolulu to Mirabel via DHL in May 2024. Ben’s work has just been greatly rewarded in October 2025 for ranking among the “top 50” best cocoa in the world by the Chocolate of Excellence. It’s an honor to be one of the only factories in the world to process these beans!
