This exceptional Vanuatu-grown cocoa was introduced to us via Daniel O’Doherty of Cacao Services. Daniel provides agricultural and scientific advice on cocoa production systems around the world. He has collaborated with Olivier Fernandez of Gaston Chocolat in Port Vila. Fernandez works mainly with small plantations in the northeast and northwest of the island of Malekula. His job is to help improve cultivation, fermentation and drying methods – which improves the flavour of the beans – and then distribute the beans overseas. This heirloom Amelonado type cocoa has a unique and wild character, with deep and complex flavor notes supported by an almost tobacco-like intensity.
