In the fall of 2024, 85 kg of cocoa nibs from Haiti's PISA cooperative made its way to Stoneham at the La
Souche beer microbrewery. The master brewers have concocted a tiramisu pastry stout with an addition of 30
kg of coffee… roasted by deTerroir in Quebec City. After the first brewing with the cereals, the cocoa and
coffee were collected in their wicked bags to be then frozen. After a return to the chocolate factory, we
dehydrated the cocoa and coffee grounds to make a new chocolate. With a significant loss of cocoa and
caffeinated flavors, we added a little crunchy side with toast from the Automne bakery and a homemade
cocoa praline. This is what we call the circular economy! This palette does not look like our chocolates in any
way, but rather has a malty profile.
