Horchata de Chufa 60% Plant-based milk

This bar is our first experience including a plant-based milk. With a Mexican cocoa from the Tabasco region, we have made a Horchata version using chufa from the city of Valencia in Spain. Made from this small tuber with the València Designation of Origin, chufa is the heart of a thousand-year-old tradition in this city. Horchata de chufa is known for its health benefits: it is an excellent antioxidant, anti-inflammatory, rich in amino acids, vitamins (C and E e) and contains enzymes that facilitate digestion. The recipe calls for a hint of cinnamon.
