The Salazar family grows this cacao on a steep 100-hectare site overlooking the Pacific. Oranges, lemons, bananas, guayabas and papayas are grown among the cocoa trees to reduce erosion and also feed everyone on the farm. Fermentation is set up in a five-level cascade system.
