Costa Esmeraldas cacao is one of the most appreciated in Ecuador and recognized worldwide for this Nacional-Venezolano Amarillo variety. The Salazar family grows this cacao on a steep 100-hectare site overlooking the Pacific. Oranges, lemons, bananas, guayabas and papayas are grown among the cocoa trees to reduce erosion and also feed everyone on the farm. Fermentation is set up in a five-level cascade system. This variety, combined with a frequent collaboration with Daniel O’Doherty of Cacao Services, produces a unique profile with notes of Concorde grapes, brownies and toasted almonds.<\/p>\n
