Daniel provides agricultural and scientific advice on cocoa production systems around the world. He has collaborated with Olivier Fernandez of Gaston Chocolat in Port Vila. Fernandez works mainly with small plantations in the northeast and northwest of the island of Malekula. His job is to help improve cultivation, fermentation and drying methods \u2013 which improves the flavour of the beans \u2013 and then distribute the beans overseas.
