Maple beans - Guatemala Polochic Valley 70%
Since 2016, our chocolate bar sweetened entirely from Domaine des 15 Lots maple sugar has been the most awarded and appreciated bar. After using wild beans from Bolivia for three years, we have selected this new varietal in 2019-2020 following a shortage of supply.
In the hot and humid microclimate of the Polochic Valley in Guatemala, a handful of indigenous Q’eqchi farmers known for their honey harvest a nano lot of outstanding cocoa beans. Only Fresco Chocolate in Oregon and Palette de Bine have been able to get their hands on those beans with their nutty and stone fruits notes.
Ingredients: 70% cocoa beans, 30% maple sugar
